Who doesn't love taco's?  If you want your friends to RSVP YES the moment they receive your invitation invite them to a taco party. 

ok, so this first photo isn't the best, I know. The flash came on when I took this shot and my friends had just arrived.  I could have told my friends to wait and retaken the shot or started having fun hanging out with my friends. As you can see, I chose my friends. 

I love using the mylar letter balloons for parties.  You don't need helium for them. Just blow them up like you would a beach ball. And they're FUN!

I want to thank my friend, Suddenly Surrounded by Taxidermy.  She sent me these mini pie dishes for my birthday and they were perfect for holding the taco toppings. Chipotle salsa, regular salsa, cilantro, sour cream and onions.

It's just not a taco party without some tasty guac.  One of my favorite recipes is from Rick Bayless.  It has sundried tomato's and serrano peppers in it. The sundried tomato's add some sweetness and the serrano's bring the heat. As you can see, I'm not so good at taking pics of guac either.  But if you like guac you need to make this recipe because it's delish!

Cinco de Mayo- al fresco for two

Gorgeous weather here this weekend in Beaverton, Oregon. As some of you may know I've had the cold that won't die.  My boss has been taking one look at me and telling me to GO HOME.  She has to be pretty stern, I don't listen well. hee hee. I would have loved to have had friends over for a big Cinco de Mayo fest but with this cold I didn't want to risk passing it on to any of my friends. 

But it's CINCO de MAYO and I couldn't not  have a party.  So with the gorgeous weather and our great backyard my man and I had a party for two al fesco. 

Every Mexican meal at a restaurant starts out with some chips and salsa.  I picked up Arriba! Fire Roasted Chipotle salsa. I love the smokey spicy taste of chipotle. 
For dinner we had taco's. I decided to try Jenni-O lean taco seasoned ground turkey..  It was really tasty and no need  to buy taco mix. I'd use it again in taco's. I also made guacamole.  One late night my man and I were flipping through the channels and landed on Rick Bayless making Sun-Dried Tomato Guacamole.  It looked so fresh and easy I had to try it.  The sun-dried tomatoes in the guac adds a  burst of flavor. I'll never buy store bought guac again. 

Refreshing Jarritos for the warm summer day were perfect with our tacos.
