Woo Hoo! Wednesday

With summer around the corner it's almost ice cream season! 
I LOVE ice cream, Woo Hoo!  Back when it came in 1/2 gallons (I'm showing my age here, I know) I use to eat 1/2 of that 1/2 gallon in one sitting. And Ben and Jerry's being 4 servings per container, HA! More like one ;)

I don't own an ice cream maker but the thought has crossed my mind. Cuisinart makes a nice compact looking one. 


I also saw this great looking attachment for your KitchenAid mixer. If you already had a mixer, you wouldn't need another appliance.

Oklahoma

This week I took off from blogging to respect those affected by the tornado in Oklahoma. My heart goes out to all of those affected. 
Especially all the fur babies out there.  Pictured below is my baby, Jasper.  He's the sweetest thing ever (A mom's gotta brag right?!) and I can just imagine how those folks feel who are searching for their fur babies. 

 Moore Oklahoma Tornado Lost and Found animals  is a Facebook page I've been following. It is so heart warming to see people being reunited. And the amount of people all over the world who see pictures on this page and scour the internet looking for matches is unbelievable. Bless all of you. 
 Central Oklahoma Humane Society has successfully reunited 44 fur kids with their families. Woo Hoo!!  I just HAD to donate.

Oklahoma fur parents you're in my thoughts and I hope you are all reunited with your fur babies.

Woo Hoo!! Let's hear it for Chocolate Chip Day!

Now I'll let you in on a little secret... I don't like chocolate chip cookies. I like the cookie part, just not the chips.  See, when I was little and my mom made chocolate chip cookies, I would eat around the chips and throw them away. So my mom starting setting some dough aside and making a few chocolate chip cookie dough cookies, no chips just for me.  Ahhh :)  Thanks MOM!  Warms your heart doesn't it.

Happy Mother's Day cupcakes

This post was suppose to be up much earlier today. But you know how it goes, work, come home and go for a run, eat some dinner, than this little cutie needed some lap time. This is Jasper. He's a Bombay, which are also known as lap fungus.  

On to the cupcakes!  For Mother's Day we grilled some chicken and I made homemade BBQ sauce. mmm mm tasty.  For dessert I made Chocolate Raspberry cupcakes from a recipe I found on Your Cup of Cake .
I followed the recipe exactly except I saved some of the raspberry puree and added it to the frosting. Made it extra raspberry-y.  Everyone thought they were delicious. Some even went back for seconds :)



They're even good naked!  
As raspberry season approaches, I highly recommend these Chocolate Raspberry cupcakes.

Cinco de Mayo- al fresco for two

Gorgeous weather here this weekend in Beaverton, Oregon. As some of you may know I've had the cold that won't die.  My boss has been taking one look at me and telling me to GO HOME.  She has to be pretty stern, I don't listen well. hee hee. I would have loved to have had friends over for a big Cinco de Mayo fest but with this cold I didn't want to risk passing it on to any of my friends. 

But it's CINCO de MAYO and I couldn't not  have a party.  So with the gorgeous weather and our great backyard my man and I had a party for two al fesco. 

Every Mexican meal at a restaurant starts out with some chips and salsa.  I picked up Arriba! Fire Roasted Chipotle salsa. I love the smokey spicy taste of chipotle. 
For dinner we had taco's. I decided to try Jenni-O lean taco seasoned ground turkey..  It was really tasty and no need  to buy taco mix. I'd use it again in taco's. I also made guacamole.  One late night my man and I were flipping through the channels and landed on Rick Bayless making Sun-Dried Tomato Guacamole.  It looked so fresh and easy I had to try it.  The sun-dried tomatoes in the guac adds a  burst of flavor. I'll never buy store bought guac again. 

Refreshing Jarritos for the warm summer day were perfect with our tacos.
